Creamy, cheesy, chunky potato soup for a crowd (as long as no one's watching what they eat...)
In large heavy bottom pot, melt butter over medium head. Add onion and garlic. When onion is translucent, add bacon and flour. Stir until a nice golden smooth consistency.
Lower heat to medium low, add milk (if you prefer your soup a bit thinner, substitute half of the milk with chicken broth). Slowly bring to low boil, seasoning with salt, pepper, white pepper and seasoning salt (or any other seasonings you prefer) as the soup cooks.
Add sour cream, 1 cup cheese and potatoes and stir until well incorporated. If needed to thicken, mash some of the potato chunks against the side of the pot with your spoon. Stir in half cup of green onions and heat a minute or two more.
Serve garnished with green onions and shredded cheese.
