Peel and chop onions. Add to warmed butter in deep pot. Cook gently while prepping potatoes. Peel and dice potatoes into small cubes. Add to onions. Add salt and pepper.
Cover with great proof paper and cook gently for 10-15 minutes.
Add chicken stock and chives. Simmer for 30 minutes.
Blitz with hand blender until smooth.
