Boil the potatoes in their skins. Place into cold water for one minute, drain and peel. Allow to cool and cut into slices. Heat half the oil in a pan. Add the chopped onions, ham and potatoes. Season and fry until brown in colour. Add the prawns and the beaten eggs. Cover with a lid and cook on a low heat until cooked through. Turn the tart out on to a plate. Heat the remain oil in the pan and slide the tart back oin to brown the other side. If you need to re-shape the mix into an even round. When cooked turn out, allow to cool a little and then cut into portions. Serve warm with a salad.
The tart can be eaten cold or re-heated. Try substituting the ham with smoked bacon for a subtle flavour.
