1. Preheat the oven to 425 degrees
2. Cut the potatoes into wedges or, to make french fries, into thin slices
3. Dip the wedges or slices into the unbeaten egg whites and place on a nonstick baking sheet coated with cooking spray.
4. Season with salt-free seasoning and bake for 25 minutes for wedges, 20 minutes for french fried, or until golden brown.
