Suggest a better descriptionBoil the potato with the skin for about 50 minutes until soft. Then drain and peel. Do not put salt in boiling water.
Rice the potato and add the extra virgin olive oil and mix a tiny bit of flour little at the time.
Mix the flour in to the dough and work with your hands, kneading until dough is firm and elastic. Divide the dough into small balls, roll into a long dough rope the diameter of your thumb. Then cut it in to the size of your thumb nail. If you like to decorate the gnocchi, put the gnocchi on the back the grater with your finger and roll down. The gnocchi will taste the same no matter if they are pretty or ugly!
Bring a large pot of salted water to a rolling boil, add 2 tablespoons salt and the gnocchi, cook for 1 and half minute (done with gnocchi is at the top of water), drain well and combine with the sauce in the skillet cooking for less than 1 minute.
For the sauce heat the mascarpone, gorgonzola, Parmesan cheese and walnuts in a heavy-bottomed 12-inch skillet over medium heat and cook until the cheeses are melted then add the gnocchi once they drain and combine with the sauce.
Typical sauce is red sauce w/ gnocchi.
Could add 1 yolk to gnocchi to change texture
