This could be a side dish, but it is so filling that it is better as the main event.
1. Bring a large pot of water to boil. Boil the potatoes until nearly fork-tender. Add the green beans to the pot and continue to cook until the potatoes are fork-tender and the green beans are cooked. Drain.
2. Return the green beans and potatoes to the pot and immediately add the spinach and green onion. Cover.
3. In a small bowl, whisk together the shallot, parsley, oregano, mustard seeds, vinegar, oil, and mustard. Drizzle over the dish. Toss to coat. Serve warm.
