Moist cake
Heat oven to 325. Butter 2 8x4" loaf pans.
In bowl mix butter and sugar. Add eggs one at a time until fully incorporated . In separate bowl sift flour, baking soda & salt. Add1 c flour mix, lemon zest & juice, vanilla & 3 tbsp 7 up to butter mixture & beat until just combined. Continue alternating flour mix & 7up until batter combined. Don't over beat! Divide batter between the 2 loaf pans. Bake 1 hour.
