Brigit's favorite and even Christian-approved
1. Make sure the cheese curds are at room temp.
2. Start the gravy. Mix the cornstarch and 1/4 Cup of cold water, and set aside. Melt the butter in a saucepan, then add the flour and cook until golden brown to make a roux. This takes about 5 minutes. Whisk often so the flour doesn't burn.
3. Sprinkle in about 1/2 tablespoon of Montreal steak seasoning, then slowly add the beef and chicken broth, whisking to ensure the roux is all absorbed and not still clumpy. Bring the mixture to a gentle boil, then stir in the cornstarch / water mixture.
4. Simmer for about 5 minutes. If the gravy doesn't seem thick enough, add a little more cornstarch mixed with water. Check seasoning and adjust of needed. Cover and keep warm until fries are ready.
5. Make your fries. If using frozen, best method is cook in an air fryer at 400 for 12 - 15 minutes, shaking several times during the cook.
6. Plate the fries, top with cheese and then cover with hot gravy. You want to do this fairly quickly so the fries and gravy stay hot to make the cheese kinda melty.
