Add sunflower seeds and pumpkin seeds to a food processor bowl fitted with a blade and set aside.
Add oatmeal and coconut flakes to a bowl and set aside.
Melt coconut oil in at least a 2 cup microwave safe measuring cup. Add sun butter, maple syrup, honey, tart cherry juice, vanilla to coconut oil. Stir until combined and set aside.
Pulse sunflower and pumpkin seeds for 30 seconds to 1 minute or until the mixture resembles coarse sand.
Add cocoa powder and pulse until combined.
Add oatmeal and coconut and pulse until combined.
Add dates and pulse until the food processor stops bouncing around.
Add cranberries and pulse for 15 to 30 seconds.
Add coconut oil mixture and pulse until thoroughly combined.
Remove bowl from food processor and scoop out 1 teaspoon to 1 tablespoon size portions and roll into balls. Place power balls on a baking sheet. Cool in refrigerator 30 minutes or longer. Store in an airtight container in a refrigerator.
