Suggest a better descriptionPrepare the onion, ginger, garlic and prawns
Heat the oil in a pan. Add the onion and cook over a medium heat
Stir occasionally until softened and just beginning to brown
Reduce the heat, add the ginger, garlic, curry powder and tomato purée
Stir for about 2 mins
Then add the coconut milk and simmer until thickened; about 10 mins
Throw in the prawns and season with salt remove from the heat and cover
After 5 mins the prawns will have cooked through
Add the coriander and add seasoning to taste
Serve hot with cauliflower rice
