Fisherman's Bisque with prawns or shrimps
1. Heat the oil in a heavy based saucepan, add the potatoes, onions and tomatoes and sauté for 10 minutes.
2. Add the garlic, stock, milk and prawns or shrimps and bring to the boil. Cover and simmer gently for 20 minutes.
3. Cool slightly, then blend in a Liquidiser in batches, until smooth. 4. Pass through a sift.
5. Season with salt and pepper to taste, then return to the pan and reheat gently.
