Take 1/2 case for Asian Chicken and other 1/2 can be brined for Indian Chicken. This is very passive. The chicken needs to brine and marinate for 30 minutes before baking
Combine all ingredients and coat well. Let it sit for 30 minutes. To cook, bake in a crowded pan on 325 for about 45 minutes or until probe thermometer comes out at 140. Once complete, and still warm, pull apart chicken into chunks about 1 inch each but not shredded. Cool chicken completely and label it for packaging.
We can package it later. 5 ounces to portion
This should be started asap so you have plenty of time to cook pan after pan while you do other things. If this is on the same day as other baked items, we can bake the bread pudding later also if you just package it into the containers and cover it with plastic. Chicken is more important, as we do not want to handle raw product while open its too small in that kitchen, I don't want any cross contamination.
