Great main dish, but can be a side dish if you leave out the chicken.
Heat oil in a skillet. Add garlic, shallots, zucchini and saute for 5mins. Add curry, chicken broth and bring to a boil. Add orzo, cover and let the stock reduce. Stir occasionally until the liquid is absorbed, about 10 mins. You can add cubed chicken at this point. Stir in cheese, parsley and peas. Season with salt and pepper to taste.
