A 6.7 pound rib roast takes about 2 1/2 hours total. Combine fresh garlic, oil, rosemary and thyme. Rub on rib roast. Let rib get to room temp before cooking (3-4 hours.) Pre-heat oven to 500 deg.
Cook rib roast for 20 minutes at 500 deg. In middle of oven.
Turn down oven to 225 deg. and cook for 25 minutes per pound.
Cook to 135 deg (always use this temp. Perfected) Let sit covered for 20 min and slice with electric knife. Salt outside of roast.
