1. Preheat oven to 375F. In a large mixing bowl, beat shortening and sugar together until fluffy; add eggs and beat well. 2. Stir dry ingredients together; gradually add to shortening mixture. Mix well. Stir in mincemeat. 3. Drop by teaspoonsful 2" apart onto greased baking sheets. Bake 8-10 minutes or until lightly browned. Cool. Frost with light confectioners sugar/milk/vanilla frosting.
