Preheat oven to 250 degrees. Lightly coat a baking sheet with olive oil.
Roll the thawed pastry out onto a flat surface. Spread Dijon mustard on the pastry sheets. Cover pastry with a layer of prosciutto, then cheese.
Roll the sheets, beginning at the long side. Cut into 1" thick sections, and lay each piece flat on the baking sheet.
Bake 10-12 minutes.
