Suggest a better descriptionPreheat oven to 450*, with a baking sheet on the very bottom of the oven. In a large bowl, whisk flour, sugar and yeast. Whisk in salt. Stir in water & lard with a wooden spoon until mixed. Knead by hand until elastic and smooth. Fold in the 3 meats and diced chili, and knead. Cover the dough and let rest 20 minutes. Shape the loaf, then cover with oiled plastic wrap & let rise for 1 hour. Glaze loaf with melted butter. Bake on lowest rack, tossing ice cubes into the baking sheet right before closing the door. Bake 20 minutes. Turn down heat to 400. Remove parchment paper and leave on pan for 10 more minutes. Glaze again with butter and cool slightly before serving with a side of stracciatella cheese.
