These light puff pastry palmiers make a delicious appetizer!
Follow the directions on the puff pastry box for thawing. It can take up to several hours for puff pastry to thaw.
Place the puff pastry on a floured work surface and smooth out with a rolling pin.
Spread the mustard in a thick layer over the top of the pastry. Arrange the prosciutto evenly over the mustard to cover all the pastry, and then sprinkle with the Parmesan cheese, lightly pressing the cheese into the prosciutto with your hands.
Starting at one long edge, roll up the puff pastry like a jelly roll and roll just to the middle of the dough; then roll up the other side in the same manner forming two rolls that meet in the middle. If you are having trouble rolling the dough you can try cutting the puff pastry widthwise so it is not so long and do it in two steps. Place the rolls in the refrigerator for 10 minutes to firm up the softened dough before cutting.
Preheat the oven to 400 degrees F.
Using a serrated knife, cut the rolls crosswise into 1/2 inch slices. Place the slices onto parchment lined cookie sheets. Press each piece lightly with your hands to gently flatten into the shape of a palmier. Refrigerate for 15 minutes.
Beat the egg with the water in a small bowl and brush the to of each palmier with the egg wash. Bake until puffed and lightly golden, about 10 minutes. Maybe served warm or at room temperature
Makes approximately 20 palmiers.
