Surprise! They are healthy too!!
Puree chickpeas till smooth and set aside. Preheat oven to 375 degrees F.
In a large bowl, mix flours, baking soda and salt. Set aside.
In another large bowl, beat margarine, sugars, applesauce until smooth. Add chickpeas, milk and vanilla. Blend until smooth. Slowly add dry ingredients and nuts until just combined.
Drop onto baking sheets 1 inch apart. Bake until golden brown, about 10-12 minutes.
May need to add a bit more flour a little at a time till the consistency is right for drop cookie batter.
