Coat 2 ½ quart baking dish with cooking spray. Preheat oven to 350 F.
Cook ziti to package directions.
Spray skillet with cooking spray and cook onion and sun-dried tomatoes for 5 minutes until soft, over med. Heat. During last minute, add garlic. Add vinegar and cook for 3 minutes, stirring occasionally. Stir in canned tomatoes, Italian seasoning. Simmer 15 min. Toss w/ ziti.
Place half the ziti mixture in baking dish and top with ½ cup cheese. Add remaining ziti, top with remaining cheese, bake for 25 minutes.
