1. On a lightly floured surface, roll out pastry to 14x9 in. Using a large knife, cut into 4 lengthwise and 8 crosswise strips.
2. Put pastry rectangles on 2 oiled baking sheets, spaced out. Cover and chill for at least 30 minutes.
3. Preheat oven to 425F. Dot a little tapenade in center of each pastry rectangle. Put tomato slices on top then add cheese and black pepper. Bake for 1-5 minutes or until risen and golden.
4. Sprinkle with thyme leaves and serve!
