mix together all but last 1/4 cup of milk and vanilla. watch and stir constantly to avoid lumping.
when has reached thickening point add last cup of milk and vanilla and stir smooth.
Variation of Flavours:
Lemon - 1 tablespoon lemon rind
Vanilla - 1/2 teaspoon almond extract
Butterscotch - 1 tablespoon butter brown with brown sugar
Chocolate - 2 tablespoons chocolate or cocoa
Rice - add 1 cup cooked white rice, 1/2 raisins and a pinch of ground cinnamon
freshly ground nutmeg, cloves, allspice, cardamom and star anise are optional
Stirring consistently is the trick to avoid lumps and scalding to bottom of pot. I like to use a double boiler pan to avoid latter.
