Oven baked pancake
Heat oven to 400. Place 10" skillet in oven to heat while everything else is being mixed.
Put the 3 eggs in a bowl. Beat a little, add the milk & vanilla and sugar, mix thoroughly. Add the salt to the flour. When the oven is about heated add the tablespoon of butter to the skillet to melt. Do not let it burn. Mix the flour into the egg mixture with a whisk. Remove the hot skillet from the oven. Move the butter around to coat. Pour egg mixture into hot oven. Bake 20 minutes.
Let cool briefly. Serve with fruit and powdered sugar or syrup.
