Spicy BBQ for dinner, lunch, or just a snack.
Rinse the chicken, sprinkle with salt and set into a large heavy duty pot. In a large bowl whisk together tomato paste with all of the other ingredients except the salt and pepper.
Once whisked together, pour mixture over the chicken and place covered pot over high heat. Once boiling reduce to a simmer and leave lid on. Cook chicken throughly but not overly cooked about 15 minutes.
Remove chicken from the pan and set onto your cutting board. Leave remaining sauce uncovered. Turn sauce back up to a high heat and let boil again until reduced by half. While the sauce is reducing, with two forks pull apart chicken and set aside in a large bowl.
Once sauce is reduced return to low heat and add pulled chicken back into the sauce. Cook for another 5 minutes while stirring and combining chicken and sauce together.
Remove from heat and serve warm. Add salt & pepper to taste. Great as a sandwich on a bun with feta or mozzarella cheese, served over rice or nachos.
