Easy delicious lunch or dinner.
Prep between 2 - 4 pm for a next day Lunch

Prep between 6-8 pm for a next day Dinner
-Pre-heat big oven to 90 Degrees Dry
-Add celery, onion, garlic powder, chilli powder, black pepper and water into the deep oven trays 2 or 3 roasts per tray, as long as you can get a lid on properly
-Place pork in the trays on top of the onion, celery etc, fat side up
-Pour the BBQ and tomato sauce over the top of everything and mix around
-Place a lid on the trays and place them into the oven
NEXT DAY -
In the morning, remove the pork from the oven and pull apart with forks, be thorough, stir well once pulled to combine with sauce, put back in the same oven without a lid until service, stir every half hour or so
Anytime before service -
-Place sour cream, salsa, cheese and lettuce into bowls, covering and storing back in the fridge until service
-Thinly slice red onions into a bowl and half cover with apple cider vinegar, cover tightly and store in the fridge
1 - 1.5 hours before -
Make fresh guacamole, cut avocados, scoop into a bowl, add lime and spring onion then mash with clean hands and gloves, cover and store in fridge
Rice option : Weigh out and wash rice, add double the amount of water to rice quantity, steam in the oven at 100 degrees for around 30 minutes, check with a fork to make sure there's no water at the bottom of the tray once cooked
Serve over the top of Corn Chips
We serve the corn chips and pork, the group can serve their own toppings
