To make the pulled pork, cut the pork into four pieces, trim the fat, and place the pork in a large bowl. Add the paprika, chili powder, garlic powder, dry mustard, and 2 tablespoons salt and toss to coat well.
Pour the bone broth into a slow cooker. Place the pork, cover and cook for 8 hours.
To make the slaw, combine the cabbage, carrots, red and green onions, and jalapeno in a large bowl. In a separate bowl, stir together the mayonnaise, mustard, vinegar and lemon juice. Pour the dressing over the cabbage mixture and gently mix. Season the slaw with the celery seeds, several dashes of hot sauce, and salt and pepper to taste. Toss to combine. Cover and chill for minimum 2 hours in the fridge before serving, garnish with cilantro.
20 minutes before the pork is done, wash 4 sweet potatoes. Coat in avocado oil, salt, and cook in the pressure cooker (Instant Pot) on the Manual setting for 15 minutes on High. Repeat the process if serving more than 4 people.
When the slow cooker is done, Remove the pork and use 2 forks to shred the meat. Skim the fat from the liquid left in the cooker and discard all but 1 cup of hte liquid. Return the shredded pork and reserved liquid to the cooker, stir in the BBQ sauce and vinegar. Season with salt and pepper to taste before serving.
Cut the sweet potato in half, place pork on top of open faced potato and then top with slaw.
Can also cook the pork in an instant pot- just adjust chicken broth to 1 cup and cook for 40 minutes
