Suggest a better descriptionObtain pork shoulder roast, approx 7-8 lbs. Cover with olive oil, and liberally apply desired spices (maybe try some honey next time too).
Heat up Big Green Egg to approximately 275 degrees F, add pre-soaked wood chips (30 minutes of soaking), insert plate setter legs up with grill on top, and drip pan beneath grill. Place pork roast on grill above drip pan, and let cook until internal temp is 160F (approx 7-8 hours).
Place pork roast into aluminum pan, pour in some apple juice with beer and create a foil tent around it. Place back into Egg and cook until internal temp of 195 (approx 2-3 more hours).
Remove, open top of foil tent, and let rest for 30 minutes. Carefully move pork roast onto cutting board and start shredding, keeping the good meat.
If using right away, throw it into a wok with the Williamson Bros BBQ sauce. Goes good on sandwiches with creamy coleslaw (buy coleslaw salad and dressing separately, and mix prior to eating)
