Not just for Thanksgiving!
Preheat oven at 350°. In a large skillet, melt butter, cook sausage (casings removed) for 5 mins. Add chopped celery & onion and cook until tender & meat is browned (7-10 mins). Transfer to bowl and let cool.
Add bread cubes, crackers, thyme, eggs and parsley to the bowl and mix with your hands. Mixture should be moist, not soggy. Season with salt & pepper. Place in backing pan and bake for 1 hour. (To keep it moist, cover loosely with tin foil while baking.)
