Peel, core and slice apples and place into crockpot. Mix the remaining ingredients together and pour over apples, then stir to coat. Cook on Medium heat 8-10 hours, stirring every few hours. Turn heat to low and continue to cook an additional 4-5 hours. Turn crockpot off and remove lid to allow to cool. Use an immersion blender to blend until smooth, or blend in batches in a food processor.
My crockpot does not have a medium setting so I cooked on high for about 4.5 hours then on low for an additional 8 then left on warm for about 3 more before blending, and it was perfect.
