Preheat the oven to 350 degrees Fahrenheit.
1. Mix together pumpkin, eggs, oil, vanilla, and sugar.
2. Sift in flour, baking soda, baking powder, salt, cinnamon, and nutmeg
3. Grease your loaf pans
4. Fill pans with equal amounts of mixture (pan should be about half full)
5. Bake loaves for 1 hour
6. Sprinkle cinnamon and sugar on top
7. Let sit for 10-15 minutes
Makes two loaves. If not serving immediately, cover with aluminum foil.
