When you take your children to pick out their Halloween pumpkins why not find a cooking pumpkin for this great bread? If not, the canned variety is great too.
Preheat oven to 350-degrees.
Dissolve the baking soda in the warm water.
Combine all the dry ingredients (except walnuts.)
Add the eggs, pumpkin, vanilla and warm water. Mix well.
Fold in the walnuts just enough to combine.
Pour into a greased loaf pan.
Bake at 350-degrees for 60 minutes or until a knife inserted into the bread comes out clean.
