Heat milk & butter just until warm & butter is almost melted while stirring constantly. Combine pumpkin, sugar & salt in a bowl. Add milk mixture to pumpkin then beat until well mixed.
Beat in egg & yeast. Combine flours in another bowl. Add 1/2 of flour mixture to pumpkin mixture. Beat mixture on low speed 5 mins. while scraping sides of bowl frequently. Add remaining flour then mix thoroughly. Note that dough will be very soft. Turn dough into lightly greased bowl then grease surface of dough lightly.
Cover then allow to rise in warm place until doubled in bulk. Punch dough down rthen turn out onto floured surface. Knead a few turns to form a smooth dough. Sprinkle with enough additional flour to make dough easy to handle. Put dough onto a lightly floured surface then roll dough into 12" x 10" rectangle. Combine brown sugar & cinnamon. Brush surface of dough with melted butter. Sprinkle with brown sugar mixture. Start with a long side of dough to roll up jelly-roll style. Pinch seam to seal. Use a sharp knife to cut roll into 12 each 1" wide slices.
Place rolls with cut side up into a greased 9" x 9" baking pan. Pre-heat oven to 350 deg-F.
Cover rolls then allow to rise for 30-45 minutes. Bake rolls for 20-25 mins. until golden.
Remove from pan to waxed paper-lined wire rack. Cool 12-15 mins.
Caramel Frosting:
Heat butter until melted. Stir in brown sugar & milk. Cook over med-low-heat for 1 min.
Transfer to small mixer bowl then cool mixture. Stir in vanilla, salt & confectioners' sugar.
Beat with electric mixer until well blended. If it is necessary add more confectioners' sugar to get desired consistency. Drizzle caramel frosting over cinnamon rolls.
