Two ingredient cookie that is very good and contains no eggs or oil.
Mix 1 can of pumpkin with 1 box of Spice Cake Mix. I used Duncan Hines. Mixture will be thick. Drop by Tablespoon full onto a cookie sheet. I line mine with parchment paper. Bake for 13 to 15 min. at 350 degrees. Remove from oven and let cool for 5 min. before moving to a cookie rack to cool completely. (Optional) Spread with your choice of icing. I used cream cheese frosting.
