In a medium mixing bowl use a hand mixer to mix the Pumpkin Purée, Cream Cheese, Eggs, Sweetener, and Pumpkin Pie Spice until thoroughly combined.
Place cupcake liners into the cups of a muffin tin or use silicone muffin pans
Pour the batter into liners and bake for 30 minutes
Refrigerate till completely cooled before serving, about 3 hours
Put leftover bites in ziplock baggies and store in freezer for up to 3 months.
