Pre-heat oven to 375 degrees. Mix together frothed eggs, brown sugar, and pumpkin. Stir together the remaining dry ingredients (salt, cloves, cinnamon, nutmeg, and ginger), and then blend dry ingredients into pumpkin mixture. Add one can of shaken evaporated milk. Prepare the pie crust (either store-bought or hand-made) in a 9 inch pie plate. Bake in oven at 375 degrees for 60 minutes. Pumpkin will rise. After one hour, check pie every 5 minutes until you can insert a knife into the center of the pie and it comes out clean.
Top with whipped cream if desired when served, keep left-overs refrigerated. Can be served warm or chilled.
Make sure you test the pie with a knife when you cook it, sometimes it takes up to an hour to bake.
