> Pumpkin Empanadas
> PUMPKIN FILLING:
> 4 Tbsp. butter - melted
> 1 1/2 cup brown sugar - stir into melted butter
> 1 can (15oz) pumpkin - stir into butter & brown sugar
> 2 tsp. ground cinnamon
> 1/2 tsp. pumpkin spice} add to pumpkin mixture
> EMPANADA DOUGH:
> 3 cups flour
> 2 tsp. baking powder
> 1/2 tsp. salt
> 1/2 cup veg shortening or lard
> 2 large eggs
> 1/2 cup milk
> 2 Tbsp. Sugar
> Mix all dough ingredients together until you can form a soft ball. Refrigerate for 30 mins to chill. Divide into 12 or 16 balls, depending how big you want them. Roll dough balls into circles. Add pumpkin filling to center. Wet the edges of dough. Fold circle in half. Press edges with fork. Pierce the top to allow steam to exit while baking. Brush with egg white. You can add a mixture of sugar & cinnamon to the top as a added spice. Place on a cookie sheet.
> Bake in a preheated oven at 350° for 18 mins or until golden brown.
