1) Heat oven to 350 degrees F.
In food processor, puree cookies and walnuts for 2 minutes
Stir in butter; press into greased 9" springform pan
Bake 8 minutes
2) In clean processor, puree 3 pkgs. cream cheese, 3/4 Cup sugar, 2 eggs, 1 yolk, vanilla extract and
nutmeg for 2 minutes
Pour into crust
Freeze 3 hrs
In processor, blend pumpkin puree, pie spice and remaining cream cheese, sugar, eggs and yolks 2
minutes
Add to pan
Let sit 2 hrs or until frozen layer thaws
Wrap outside of pan with foil
Place in roasting pan containing 1" warm water
3) Heat oven to 325 degrees F
Bake 1 hr and 30 minutes or until center is just set
Turn off oven
Let sit in oven with door ajar 1 hour
Chill 3 hours or until set
