This is so easy and so delicious! If you've ever had a Pumpkin Pie Blizzard from Dairy Queen, this tastes EXACTLY the same!
Soften 2 quarts of vanilla ice cream. (I used slow-churned). Put in a large bowl. Add the pumpkin and using your hand mixer, mix until well combined. You can eat it now, but it may be too soft and soupy. Cover and put in the freezer.
When ready to serve, crunch up Nilla Wafers over the top and a dollop of Cool Whip, if desired.
