Addictive and super fast sweet muffins
Preheat oven to 350 degrees. Prepare muffin tins with non-stick spray.
Stir together the dry ingredients of the cake mix (no oil, eggs or water – just the mix), pumpkin and cinnamon. Optional: fold in chocolate chips.
Using an ice cream scoop, portion out 12 muffins. (Although the muffins will rise, the batter will not even out. Using an ice cream scoop will make an attractive-looking muffin.) The batter will look very thick.
Bake at 350 for 15 -20 minutes or until done – inserted toothpick comes out clean.
