Mix sugar and oil. Add eggs; beat well. Add pumpkin, beat well. Mix together dry ingredients. Add dry ingredients to pumpkin mixture. Blend thoroughly.
Grease loaf pans or muffin tins (or use paper liners).
Bake at 350 until inserted toothpick comes out clean.
2 large loaves for 1 hour
4 small loaves for 35-40 min
24 regular muffins 25 min
48 mini muffins for 15-20 min
