These may be a mouthful, but they're easy, delicious, and it makes a huge batch. They freeze well too!
1. Preheat oven to 350 degrees
2. Combine flour, baking soda, cinnamon, and salt. Mix together and add in oats
3. Cream the butter in an electric mixer. Gradually add the sugars, and beat until fluffy
4. Add egg and vanilla, and mix well
5. Alternately add dry ingredients and pumpkin, mixing well after each addition
6. Stir in chocolate chips
Using a cookie scoop, drop the cookies on to a baking sheet lined with parchment. Bake 12-13 minutes or until lightly browned
