Extremely tasty!
Preheat oven to 400. In large bowl, beat eggs, buttermilk, butter, molasses, pumpkin and vanilla. Stir in flour, brown sugar, baking powder and baking soda; mix just until blended. fold in pecans and dates. Fill greased muffin cups two thirds full. Bake for 20 to 25 minutes, or until a toothpick inserted into center of muffins comes out clean. Makes 12-17 muffins
*You can buy pumpkin pie spice in most stores, but it''s just a mixture of 4 parts cinnamon, 2 parts ginger, 1 part nutmeg, 1 part allspice and a dash of cloves.
