Roll out short pastry & line 23cm pie dish.
Add sugar, butter, golden syrup, cinnamon & ginger to the mashed pumpkin.
Lightly beat the egg yolks in the milk & add to mixture.
Beat the egg whites until stiff and fold in. Pour into the lined pie dish.
Bake at 180C for about 1 hour, until the centre is set.
Serve with whipped cream & or hokey pokey icecream.
