In a large bowl, combine flour, sugar, baking powder, and salt. Set the bowl aside. In a smaller bowl, add milk, olive oil, egg yolks, pumpkin seed oil, and vanilla extract. Use a mixer on low to mix. In a separate bowl, use the mixer on high to turn the egg whites into foam.
Then combine the solids and liquids in the large bowl. After combined, gently add in the egg white foam and mix gently until combined.
Heat up your waffle iron and cook waffles according to the temperature of your waffle iron.
