In a cereal bowl mix 2 tablespoons sugar and 2 1/2 teaspoons cinnamon and set aside. Preheat oven to '350 degrees. In a large bowl, mix together sugar and butter. Then add pumpkin and eggs. In a different bowl mix together flour, cream of tartar, baking soda, salt, 1 1/2 tablespoon cinnamon, and nutmeg. gradually add the flour mix to the butter mix. Then take a little bit of the dough, roll it into a ball, roll it in the cinnamon and sugar mix, put it on a cookie sheet, and bake for 10 minutes. enjoy!
If you use raw cane sugar, the butter and sugar will not be very smooth or fluffy. Just add in the pumpkin and eggs and it will be fine.
