Chop pumpkin and dice into small pieces.
Heat butter in large saucepan, add onion, curry powder and cumin, stir constantly over heat until onion is soft. Add pumpkin stir over heat for a minute to combine then add water and stock cube to the saucepan. Bring to boil, reduce heat and simmer, covered, until pumpkin is tender.
Blend or process pumpkin mixture until smooth. Stir in parsley before serving.
