Delicious sweet creamy pumpkin soup, super easy if cooked in the thermomix and still very easy if cooked on the stove top.
Place onion and garlic in the mixing bowl. Chop 3 sec/speed 5. Scrape down sides of bowl.
Add butter and Sautee 3 min/120 degrees/ speed 1.
Add pumpkin, sweet potato & carrot and chop 20 secs/speed 7. You may need to check it, mix it and do 10 more secs.
Add water and veggie stock paste and cook 27 min/ 100 degrees/ speed 1.
Add cream, salt and pepper and blend 1 minute speed 5 gradually increasing to speed 9.
Garnish as you wish and serve hot.
You may want to add less water if you like a thicker soup. Veggie stock paste is not essential but does add good flavour.
