Step 1: For the pastry, mix flour, butter and salt to form the texture of breadcrumbs. Add just enough water to bind the pastry. Wrap dough in cling film and refrigerate for 30 minutes.
Step 2: Preheat the oven to 350 degrees. Cut the pumpkin slices vertically into broad slices, remove any seeds and peel. Brush lightly with olive oil and bake in the oven for 20 minutes. De-stalk, wash and put into a large saucepan, cover, wilt in the water left clinging to it. About 4 minutes low to med heat. Then drain well and cool.
Step 3: Make custard: Mix the eggs, egg yolk, cream, and Parmesan. Roll out the pastry into a 9in tart tin and chill for 30 minutes, or stick in freezer for 15 minutes. Prick bottom of tart and line it with parchment paper and ceramic baking beans. Bake for seven minutes. Remove the paper and beans and cook for another four minutes.
Step 4: Cut the pumpkin into 1/2 inch thick slices about 4 inches long. Drain and squeeze out every bit of water and chop the spinach, add the nutmeg, salt and pepper to spinach. Spread over the tart crust. Add pumpkin slices. Dot with Gorgonzola, pour in the custard mixture and bake for 40 minutes. Leave to rest 10 minutes to let the custard finish cooking and set a little once out of the oven.
