Hearty Mexican Casserole
1. Preheat oven to 350 degrees. Brown ground beef & onion in a large skillet on med-high heat; drain fat. Add tomato sauce, beans, corn & green chiles; mix well. Stir in all of the spices except red pepper. Bring to a boil. Reduce heat to low and simmer 5 min. Add red pepper to taste.
2. Spread 1/2 cup of the beef mixture on bottom of a 9"x13" baking dish sprayed with non-stick cooking spray. Top with 3 tortillas, overlapping if needed. Layer with 1/2 of the remaining beef mixture and 1/2 of the cheese. Repeat with remaining 3 tortillas, beef mixture and cheese.
3. Bake in oven for 15-20 min. Let stand for 5 min before serving.
