1. Finely chop the garlic and red onion.
2. Heat 1 tablespoon on oil in a saucepan.
3. Sautée the onion and garlic in the oil.
4. Once slightly translucent, add the beef mince, stir through and cook until brown.
5. Add spices, stock cube, sauces and carrot. Stir through thoroughly.
6. Cook over LOW heat until the sauce is absorbed/thickened.
7. Remove from heat.
Assembly:
1. Heat fry pan with a splash of oil. Medium heat.
2. Place 1/8 of the cheese on one half of the tortilla wrap.
3. Lay avocado slices over cheese.
4. Place wrap in fry pan, cheese and avocado side up.
5. Spread 2-3 spoonfuls of filling over the cheese and avocado.
6. Sprinkle 1/8 of the cheese on top of the filling.
7. Fold the empty half of the wrap over and press firmly down with spatula.
8. Once underside of wrap is browned, flip carefully over and brown the other side.
9. Repeat with remaining 3 wraps.
